Spices by Mabu Mabu

Mabu Mabu is a saying from the Torres Strait that means 'help yourself.'   'Traditionally, a Mabu Mabu is a banquet, shared table or big family meal. It's how we like to enjoy food on the islands: surrounded by the people we love.  

Mabu Mabu are a Torres Strait owned and run business with an emphasis on using fresh, seasonal and native ingredients to create beautiful dishes that bring people together.  If you are in Melbourne be sure to check out their restaurant!

Nornie Bero is the head chef and business owner. Originally from Mer Island in the Torres Strait, Nornie has been a professional chef for over 20 years. Her style of cooking is all about generosity and flavour. She has been creating dishes using native ingredients for much of her career, and is currently on a mission to make Indigenous herbs, spices, vegetables and fruits part of everyone's kitchen pantry. 

This range of products is you chance to try some of these amazing flavours at home.

Spices range between 30-50g. Keep air tight and away from sunlight to preserve flavour.

How to use

Saltbush - a rich umami flavour that can be added to soups, sauces and curries.

Desert Herbs - an amazing meat rub that can be added to koftas, meatballs or straight onto a leg of lamb.

Cinnamon Myrtle- use it as a flavouring in cakes, biscuits or with your morning yoghurt.

Ground Wattleseed - adds a rich an earthy flavour to curries, dahl or mac'n'cheese.

Lemon Myrtle - can be used as a substitute for lemongrass or preserved lemon in curries and tagines.

Strawberry Gum - use it as a flavouring in cakes, biscuits or panna cotta.

Bush Tomato Seasoning - add to soups and stews for a rich flavour.

Pepperberries - a powerful substitute to pepper, best used in moderation on meat and roast vegetables.

Lemon Aspen Salt - an amazingly versatile salt that can be added to fish, roast vegetables, or cooked meats.
